Ingredients :
2 large onions chopped
3 cups chopped spinach
1 tomato grated
2 potatoes boiled and peeled
1 tsp red chilli powder
1 piece ginger
2 green chillies
1/2 tsp wheat flour
1 tsp cinnamon-clove powder
1/2tsp cumin seeds
2 pinches asafoetida
1/4 tsp turmeric powder
4 tbsp ghee
1/2 tsp garam masala
1/2 tbsp butter
1 tsp lemon juice
Salt to taste
Method :
1. Put the washed spinach in a frying pan, add a little of water and a pinch of salt.
2. Cover and boil over a high flame for about 3-5 minutes.
3. Cool it quickly, or hold under running water in a colander.
4. Put it in a mixie add green chilli and run for about a minute.
5. Keep slightly coarse and do not make very smooth. Keep the mixture aside.
6. Cut the potatoes into big pieces and heat the ghee and fry potatoes till they become light brown in color.
7. Drain the potatoes and keep them aside.
8. In the same hot ghee add the cumin seed seeds, the ginger, onions and fry till they become very tender.
9. Then add the tomatoes and further fry for 2-3 minutes.
10. Nrxt, add all the dry masalas and fry till ghee separates.
11. Add spinach and potatoes.
12. As it resumes a boil scatter the flour and stir it well. Boil for about 2 to 3 minutes.
13. Finally add lemon juice and Just before serving heat butter in a tiny saucepan & add asafoetida.
Pour over the vegetable and mix it gently. Serve hot.
