Fish Fried Rice

Ingredients-

1/2 kg Fish(white), cut into small pieces
2 cup Long grained rice
2 tsp dried out coconut
2 large Onions, chopped
1 tsp Ground coriander
1 inch Piece ginger
1/2 tsp Turmeric powder
1/2 tsp Fenugreek seeds
2 tsp Ground cumin seeds
Juice of a 1/2 lime
1/2 cup Oil
1 Bay leaf
Salt to taste

Method-

1. Wash the rice and soak it in cold water for about one hour.
2. Wash and cut the fish into 2-inch pieces.
3. Mix the coriander, cumin, turmeric, fenugreek and ginger altogether.
4. Heat 2 tsp of oil in a large frying pan and fry the above mixture for about 2-3 minutes.
5. Place the fish in the pan and stir without breaking the pieces.
6. Keep the p[an covered and allow the fish to cook in its own steam for 5-6 minutes.
7. Remove the fish carefully with a fish slice and keep them warm.
8. In the meantime fry the onions with the bay leaf in the remaining oil till it becomes brown.
9. Drain the rice and add to the onions.
10. Mix the lemon juice and coconut in the rice and fry lightly for a 4-5 minutes.
11. Pour a cup of water into the pan in which fish was fried and bring it to the boil and then pour this water into the rice mixture.
12. Next, add extra warm water just enough for rice to simmer and cook.
13. Turn the rice out on a serving plate and arrange the cooked fish pieces on top.
14. Garnish with chopped coriander leaves and serve hot.
