Nutritious Vegetable Salad

Ingredients-

5 cups cauliflowerets
5 cups broccoli florets
2/3 cup sliced onion
2-3 cups shredded Cheddar cheese
1/2 cup sugar
1/2 cup raisins
1 cup mayonnaise
1/4 cup sunflower kernels
6 bacon strips, cooked and broken down
2 tsp cider or simply red wine vinegar

Method-

1. In a large salad bowl, put together broccoli, cheese, cauliflower, onion and raisins.
2. In a small trough, combine mayonnaise, sugar and vinegar.
3. Pour this mixture over salad and toss it to coat.
4. Cover the salad and refrigerate for about 60 minutes.
Sprinkle it with the bacon and sunflower seeds.
