Tabak Maaz

Ingredients-

1 kg Lamb ribs
1/2 cup Milk
1 tsp Powdered aniseeds
1 tsp Dry ginger powder
1 tsp Powdered cinnamon
1 tsp Turmeric powder
A pinch Asafoetida powder
250 gm Ghee
2-3 Cloves
Salt to taste

Method-

1. Take the entire rib part and cut into rectangular pieces across the ribs. Care should be taken that the muscle covering the ribs is not removed. Each piece of the rib should be about 5 inches in length & 2 inches in width, containing about 3-4 pieces of rib bone in the meat.
2. Take 1/2 litre of water and 1/2 cup milk in a vessel and add aniseed,turmeric, asafoetida, ginger and cinnamon powders along with cloves and salt to taste.
3. Stir well the mixture, place rib pieces and boil on medium flame till the meat becomes tender and almost all water gets absorbed. Withdraw the meat pieces from heat and set them aside.
4. Meanwhile, heat ghee in a frying pan and deep fry the meat pieces one by one until it turns crispy on both sides.
At the time of serving the dish, place the frying pan in an oven for about 5-6 minutes at a moderate temperature and serve the dish hot.
