Vegetable Kurma

Ingredients :

Vegetable Oil
1 big onion
Salt to taste
1 capsicum
3 carrots
2 small potatoes
3-4 cauliflower pieces
2 garlic pieces
A small ginger piece
7-10 beans
1/2 tsp cinnamon
2-3 cloves
a littlebit of elaichi
10-15 cashew pieces
1/2 cup coconut
1 tsp of khus khus

Method :

1. Cut the onions into little pieces and 1/4th of the them into big pieces.
2. Take a skillet with little of vegetable oil and add some cloves, cinnamon,cashews and elaichi and fry them a little.
3. Add garlic, ginger and big pieces of onions and then keep it aside, to cool a bit after everything is fried well.
4. Next, grind the whole mixture with coconut and khus khus and keep it aside.
5. Now take a little oil and add Saunf, & then onions and fry it nicely.
6. Take all the vegetables cut into smaller pieces and boil them in the microwave oven.
7. After everything is cooked finely, add them to the onions and mix very well.
8. Add the salt in the ground mixture.
After everything is mixed well add little of water if it is very thick.
